- 2 lb. cod or haddock fillet
- 1 (1 lb.) can tomatoes
- 3/4 c. chopped onions
- 1/2 c. chopped parsley
- 1/4 c. vinegar
- 1/4 c. olive oil
- 1 clove garlic, crushed
- 1/4 tsp. pepper
- 1/2 tsp. salt
Directions

1Combine tomatoes, onion and parsley (set aside).

2Combine vinegar, oil, garlic, pepper and salt (set aside).

3In casserole, place a layer of tomato mixture, then layer of fish and the layer of oil mixture.

4Repeat.

5Bake at 350° for 50 minutes.

6Serve with rice.
