  • 1/2 cup sliced onion (rings)
  • 1/2 cup diced red bell pepper
  • 1 garlic clove minced
  • 1 cup chopped tomato
  • 1 Tbs capers
  • 1/4 tsp ground cumin
  • 1/8 tsp crushed red pepper
  • 2 6oz cod fillets

Directions

    Heat oil in lg nonstick skillet over med-high heat. Add onion, bell pepper, and garlic. Saute 2 minutes.

    Add tomato, capers, cumin, red pepper. Cook on medium heat for 5 minutes.

    Add fish. Cover and cook 10 minutes.
