Cod With Fruit Salsa

- 1 1/2 pounds cod
- 1 1/2 tablespoons butter
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 can pineapple chunks drained
- 1 mango peeled and chopped
- 1 tablespoon chopped cilantro
- 1 tablespoon lime juice
- 1 jalapeno chile seeded and chopped
Directions

1Using a paper towel, dry off the cod pieces. Rub butter on each of the pieces of cod. Sprinkle with salt and pepper.

2Grill for about 5 - 7 minutes on each side or until light and flaky.**

3For the Fruit Salsa

4In a small bowl, mix all of the salsa ingredients.

5When fish is done, top with salsa and serve

6**If you are not able to grill your fish - heat oven to 425 degree F and bake for about 10 - 15 minutes. Fish should be flakey when done.
