Cod With Fruit Salsa

  • 1 1/2 pounds cod
  • 1 1/2 tablespoons butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can pineapple chunks drained
  • 1 mango peeled and chopped
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lime juice
  • 1 jalapeno chile seeded and chopped

    Using a paper towel, dry off the cod pieces. Rub butter on each of the pieces of cod. Sprinkle with salt and pepper.

    Grill for about 5 - 7 minutes on each side or until light and flaky.**

    In a small bowl, mix all of the salsa ingredients.

    When fish is done, top with salsa and serve

    **If you are not able to grill your fish - heat oven to 425 degree F and bake for about 10 - 15 minutes. Fish should be flakey when done.
