- 4 Tbsp. butter
- 2 Tbsp. vegetable oil
- 2 large onions, chopped
- 2 celery stalks, chopped
- 1 green pepper, chopped
- 1 tsp. thyme
- 1 tsp. hot sauce
- 2 c. flour
- 2 tsp. baking powder
- 4 egg yolks, beaten
- 2 c. milk
- vegetable oil for frying
Directions

1Soak codfish in water overnight.

2Drain fish, then add more water and boil about 10 minutes.

3Drain fish again and press out the excess water.
