  • 4 medium potatoes, boiled and diced
  • 3 eggs, hard-cooked and chopped
  • 1 onion, chopped
  • 1/2 c. pitted green olives, sliced
  • 2 Tbsp. parsley, chopped
  • 3/4 c. olive oil
  • 1/3 c. lemon or lime juice
  • dash of pepper

    Salt cod is not uniform in its saltiness; a small fillet that can be easily bent does not need as much soaking as a large piece that is stiff with salt.
