- 1 cup ketchup
- 1/2 cup Worcestershire sauce
- 1/2 cup strong brewed coffee
- 1/2 cup apple cider vinegar
- 1/2 cup dark brown sugar
- 1-1/2 tsp. chili powder
- 1/4 tsp. kosher salt
- For the duck
- 4 14-oz. Muscovy duck legs (available at dartagnan.com)
- Kosher salt and freshly ground black pepper
- 1 Tbs. olive oil
- 1 large yellow onion, halved and sliced
- 6 medium cloves garlic, smashed and peeled
- 2 cups chicken stock
- 2 cups Coffee Barbecue Sauce
- 1/2 cup chopped cilantro, plus 2 Tbs. leaves for garnish
- 1 Tbs. cold unsalted butter
