  • 1 c. flour
  • 3/4 c. sugar
  • 2 Tbsp. plus 1 tsp. Espresso coffee powder
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 c. milk
  • 1/4 c. heavy cream
  • 3 Tbsp. melted butter
  • 1 tsp. vanilla
  • 1/4 c. packed brown sugar
  • 1 1/4 c. hot water
  • 2 Tbsp. brandy
  • whipping cream or vanilla ice cream (for serving)

Directions

    Sift flour, 1/2 cup sugar, 2 tablespoons Espresso powder, baking powder, baking soda and salt in large bowl.

    Mix milk, cream, butter and vanilla.

    Add to dry ingredients.

    Stir until blended well.

    Spread batter in 8-inch cake pan.

    Mix remaining 1/4 cup sugar, brown sugar and remaining 1 teaspoon Espresso coffee powder.

    Sprinkle over batter.

    Mix brandy and hot water.

    Pour over top of cake.

    Bake at 350° for 35 minutes, until cake is set.
