Coffee Shortbread

Ingredients

  • 1 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons instant coffee granules
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1/2 cup white chocolate chips, melted

Directions

    Cream the butter, coffee and sugars until light and fluffy.

    Combine the flour and salt. Gradually add to the creamed mixture.

    Roll out to 1/4 inches thickness. Cut with a floured 2-3 inches round cookie cutter. Place 2 inches apart onto ungreased baking sheets.

    Bake at 300*F (155*C) for 20-22 minutes or until set.

    Remove to wire racks to cool completely.

    Drizzle with white chips, then semi-sweet chips.

    Store in an airtight container.
