- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 3 tablespoons instant coffee
- 2 teaspoons vanilla extract
- 2 eggs
- 2/3 cup milk
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 3/4 cup semi-sweet chocolate chips
- 1 1/2 cups coarsely chopped walnuts or 1 1/2 cups pecans
Directions

1Preheat oven to 350.

2Grease and flour 12 muffin pan cups.

3Cream the butter with the sugars, coffee and vanilla.

4Beat together the eggs and milk.

5Combine the flour, salt and baking powder.

6Alternately add the wet and dry ingredients to the butter mixture.

7Stir just to combine.

8Add the chips and nuts.

9Fill the tins full.

10Bake for 20-25 minutes.

11Cool 5 minutes, then remove and cool on racks.
