- 4 slices bacon
- 4 (6 oz.) sliced mushrooms
- flour
- salt and pepper
- 2 cloves garlic, crushed
- 1 1/2 Tbsp. parsley
- 1 1/2 c. white wine
- 6 to 8 pearl onions
- 6 to 8 boneless chicken breasts
- 6 Tbsp. butter
- 3/4 tsp. tarragon
- 1/2 tsp. thyme
Directions

1Fry bacon until crisp, drain and crumble.

2In a bit of bacon grease, saute onions and mushrooms, then remove from pan. Lightly dredge chicken in flour, salt and pepper.

3Add butter to frying pan and brown chicken.

4Remove to casserole and sprinkle with garlic and herbs.

5Add bacon, onions and mushrooms and pour on wine.

6Cover and bake at 350° for one and one-half hours. Serves 4 to 6.
