Colby Corn Chowder

- 6 large potatoes, peeled and cubed
- 1 tsp. salt
- 1 large onion, chopped
- 1/4 c. butter or margarine
- 2 (14 3/4 oz.) cans cream-style corn
- 4 bacon strips, cooked and crumbled
- 3 c. milk
- 8 oz. Colby cheese, cubed
Directions

1Place potatoes in a Dutch oven.

2Sprinkle with salt and cover with water.

3Bring to a boil.

4Reduce heat.

5Cover and simmer until potatoes are tender.

6Meanwhile, in a skillet, saute onion in butter until tender.

7Stir in corn and bacon.

8Heat through. Drain potatoes.

9Add milk.
-
10Heat through.
-
11Stir in corn mixture and cheese.

12Serve immediately.

13Serves 12 to 14 (3 quarts).
