Ingredients

  • 1 1/2 lb. potatoes (about 4 medium size)
  • 1 1/2 c. milk
  • 6 scallions
  • 1 1/2 c. chopped green cabbage, boiled and drained
  • 1 Tbsp. butter
  • 1 Tbsp. chopped parsley
  • pepper and salt to taste

Directions

    Boil, drain and mash potatoes.

    While potatoes are cooking, chop scallions and place in small bowl.

    Pour boiling water over scallions to keep the tops green.
  4. 4
    Bring milk almost to a boil; add drained scallions and pour over mashed potatoes.
