- 6 potatoes
- 6 scallions
- 1 c. milk
- 3 Tbsp. butter
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. cooked cabbage
- 12 Irish bacon rashers
Directions

1Chop 6 scallions very fine.

2Soak in cup milk with 1 teaspoon of salt for 1/2 hour.

3Put in a saucepan and simmer for 1/2 hour. Boil 6 medium potatoes, peeled in salt water.

4Cover until tender. Drain, dry and begin to mash.

5When smooth, beat in the scallions and milk.

6Add 3 tablespoons butter and continue beating over low heat.
