- 1 small eggplant
- 1 Tbsp. chopped fresh tomatoes
- 1/4 tsp. crushed garlic
- 1/2 tsp. extra virgin olive oil
- 1/4 tsp. fresh lemon juice
- 1 Tbsp. chopped fresh parsley
- 1 Tbsp. diced onions
- 1/8 tsp. no salt seasoning
Directions

1Broil eggplant in oven for 15 to 25 minutes, until it pops open.

2Remove center and discard skin.

3Run eggplant in blender until mushy or use fork.

4Add remaining ingredients; mix well and chill for 1 to 2 hours.

5Great with crackers or chips.

6Makes about 1 cup.
