  • 1 cup vegetable broth
  • 3 7/16 cups peas
  • 1 scallion diced
  • 1/2 cup plain yogurt
  • salt and ground black pepper
  • 1 teaspoon mint chopped
  • 1 lemon
  • olive oil

Directions

    Heat the broth in a saucepan on medium heat. Add the peas and scallion and simmer for 5 minutes. Puree in a blender and strain twice. Set aside to cool.

    Season the soup with salt and pepper and stir in the yogurt. Refrigerate until cold.

    Garnish with mint, lemon zest, and a drizzle of olive oil.
