- 1 cup vegetable broth
- 3 7/16 cups peas
- 1 scallion diced
- 1/2 cup plain yogurt
- salt and ground black pepper
- 1 teaspoon mint chopped
- 1 lemon
- olive oil
Directions

1Heat the broth in a saucepan on medium heat. Add the peas and scallion and simmer for 5 minutes. Puree in a blender and strain twice. Set aside to cool.

2Season the soup with salt and pepper and stir in the yogurt. Refrigerate until cold.

3Garnish with mint, lemon zest, and a drizzle of olive oil.
