Cold Spinach Soup

Ingredients

  • 3 Tbsp. butter
  • 1 c. chopped scallions or green onions
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 12 (10 3/4 oz.) cans cream of potato soup
  • 2 (13 1/2 oz.) cans chicken broth
  • 2 Tbsp. lemon juice
  • 1/4 tsp. pepper
  • salt to taste
  • 1/2 c. half and half cream
  • 1 c. sour cream

Directions

    In large frying pan, melt butter and saute scallions. Transfer to large bowl and add spinach, potato soup, chicken broth, lemon juice, salt and pepper.

    Puree in blender or food processor.

    Put back into bowl and stir in cream and sour cream. Chill at least 8 hours.

    Garnish with chopped parsley and/or lemon rind.
