Ingredients
- 1 lb. smoked turkey parts
- 1 1/2 qt. water
- 1 to 2 hot pepper pods or 1 tsp. crushed red pepper
- 3 cloves garlic, minced
- 4 lb. fresh collard greens
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 1 small green pepper, chopped
- 1 tsp. sugar
- 1 Tbsp. vegetable or olive oil
- salt and pepper to taste
Directions

1Place turkey in Dutch oven or large saucepan.

2Add water, pepper pods and garlic.

3Cover and bring to a boil.

4Reduce heat to low and simmer 30 minutes.

5Break off and discard stems of collards.

6Wash leaves thoroughly.

7Slice leaves into bite size pieces by rolling several leaves together and slicing in 1/4-inch strips.

8Add collards, onion, celery, green pepper, sugar, oil, salt and pepper.

9Cook 30 to 40 minutes or until greens are done. Yields 8 to 10 servings.
