  • 1 lb. smoked turkey parts or ham hock
  • 1 1/2 qt. water
  • 1 hot pepper pod, minced
  • 3 clove garlic
  • 4 lb. fresh collard greens
  • 1 Tbsp. sugar
  • 1 Tbsp. vegetable or olive oil
  • salt and pepper to taste

Directions

    Place turkey or ham hocks in large saucepan; add water, pepper pod and garlic.

    Cover and bring to a boil.

    Reduce heat to low and simmer 30 minutes.

    Add collards, sugar, salt and pepper. Cook 30 to 40 minutes or until greens are done.

    Makes 8 to 10 servings.
