- 1 ham hock
- 1/2 tsp. crushed red pepper flakes
- 4 lb. collard greens
- 1/4 c. cider vinegar
- 1 tsp. sugar
- salt and black pepper
- 1 Tbsp. onion, chopped
Directions

1Wash ham hock and place in a pot with cold water to cover. Add pepper flakes; cover with lid and bring to a boil.

2Reduce heat and simmer 45 minutes to 1 hour; add more water if necessary. Wash greens and rinse well.

3When the hock is done, add the greens and remaining ingredients to the pot.

4Lower heat and simmer until tender, about 45 minutes to 1 hour.

5Stir.

6Season to taste and serve with extra vinegar and hot sauce on the side.
