- 1 lb. smoked turkey parts
- 1 1/2 qt. water
- 3 garlic cloves, minced
- 4 lb. fresh collards
- 1 medium onion, chopped
- 2 celery stalks
- 1 small green pepper
- 1 Tbsp. sugar
- 1 Tbsp. vegetable or olive oil
- salt and pepper to taste
Directions

1Place turkey in Dutch oven with garlic.

2Add water.

3Cover. Bring to a boil.

4Reduce heat to low and simmer for 30 minutes. Meanwhile, break off and throw away stems of collards.

5Wash leaves thoroughly.

6Slice into small pieces.

7Add collards, onion, celery, green peppers, sugar, oil, salt and pepper.

8Cook 30 to 60 minutes.

9Simmer until done.
