- 2 T (1/4 stick) butter
- 2 T vegetable oil
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 lbs collard greens, thick stems trimmed, leaves coarsely chopped
- pork hock
- 2 cups low-salt chicken broth
- 1 T sugar
- 1 T red wine vinegar (optional)
Directions

1Melt butter w/ veg oil in large pot over medium-high heat. Add onion and garlic and saute until tender, about 6 minutes. Add ham hock. Add greens and saute until beginning to wilt. Stir in broth, bring to boil. Reduce heat; cover and simmer until greens are very tender, stirring occasionally about 45 minutes. Stir in salt, pepper & vinegar (optional).
