Collard Salad

Ingredients

  • 1 good size bundle collards
  • 2 or 3 Tbsp. chopped pickles or relish (more if you desire)
  • 8 or 10 saltine crackers, crumbled
  • mayonnaise (enough to make soft)
  • 1 to 1 1/2 c. chopped ham

Directions

    Boil collards until real tender. Salt to taste. Chop collards in a chopper (not blender).

    Mix all ingredients well. Serve with salad crackers or it makes a delicious sandwich.

    Add pepper sauce for flavor, if you desire.
