- 3 lb. ham hocks
- 2 large pigs knuckles
- 4 green onions, chopped
- 1 bell pepper, chopped
- 1 jalapeno pepper, chopped
- 1 bunch collard greens, stripped, finely chopped and washed
- salt and pepper to taste
Directions

1In large pot, boil all ingredients, except greens, in enough water to cover.

5Add greens; cook until greens are tender, adding water periodically (keep water level at 1 to 2 inches).
