Ingredients

  • 3 lb. ham hocks
  • 2 large pigs knuckles
  • 4 green onions, chopped
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1 bunch collard greens, stripped, finely chopped and washed
  • salt and pepper to taste

    In large pot, boil all ingredients, except greens, in enough water to cover.

    Season to taste.

    Boil for 5 minutes.

    Turn to medium heat.

    Add greens; cook until greens are tender, adding water periodically (keep water level at 1 to 2 inches).
