  • 2 to 3 lb. chicken, cut up
  • 2 to 3 c. shortening
  • 3/4 c. all-purpose flour
  • 1 1/2 Tbsp. oregano
  • 1/2 tsp. paprika
  • 1 tsp. garlic salt
  • 1/4 tsp. pepper

    Combine flour and seasonings; roll the chicken in the flour mixture.

    Using a Dutch oven or other heavy deep pan, fry the chicken in shortening at 350° for 15 minutes on each side or until tender.
