- 8 Tbsp. butter (or oleo) at room temperature
- 1 cup sugar
- 3 large eggs (room temperature)
- 1 tsp. vanilla
- 1/2 cup nuts, chopped
- 1/2 cup white raisins
- 1/2 cup fresh or frozen coconut
- 1 unbaked pie crust
Directions

1Cream butter and sugar until light.

2Add eggs, one at a time, beating well after each addition.

3Add vanilla.

4Stir in pecans, raisins and coconut.

5Mix well.

6Pour into pie crust and bake at 300 degrees for about 45 minutes.

7Top with whipped cream when served or Cool Whip.
