  • 1 can whole grain corn
  • 1 c. chopped onions
  • 1/2 c. chopped red sweet pepper
  • 1/2 c. chopped green sweet pepper
  • 2 Tbsp. butter
  • 2 Tbsp. vegetable oil
  • 3 Tbsp. grated Parmesan cheese
  • 1/2 tsp. chopped fresh garlic
  • salt
  • pepper
  • oregano
  • parsley flakes
  • 2 eggs
  • 1 box Pillsbury pie crusts (ready to use)

Directions

    Heat oven to 375°.

    In large skillet, cook onions and peppers in butter or oil until tender.

    Stir in parsley flakes, oregano, pepper, salt and garlic.

    In large bowl, combine eggs, grated Parmesan cheese, corn and the cooked vegetable mixture (onions and peppers).
