- 1 medium head cauliflower
- 1/4 c. diced green pepper
- 1/4 c. flour
- 1 tsp. salt
- dash of paprika
- 1/2 lb. mushrooms, sliced
- 1/3 c. oleo or butter
- 2 c. milk
- 6 slices pimento cheese
Directions

1Separate cauliflower in medium pieces.

2Cook, covered in boiling salted water until tender, about 10 to 15 minutes; drain. Meanwhile, brown mushrooms and green pepper lightly in butter and flour.

3Add milk and cook, stirring constantly until thick like a gravy.

4Add salt.

5Place 1/2 the cauliflower in a 1/2-quart casserole dish.

6Cover with half the cheese, then half the sauce. Repeat the layers and sprinkle with paprika.

7Brown lightly in moderate oven at 350° for 15 minutes.
