- 4 large boneless breast halves
- 3 eggs, beaten to blend
- 1 c. seasoned dry bread crumbs
- 10 Tbsp. butter
- 1 lb. sliced mushrooms
- 4 slices Muenster cheese
- 1/4 c. canned chicken broth
Directions

1Preheat oven to 350°.

2Pat chicken dry.

3Place in bowl.

4Pour eggs over.

5Cover and refrigerate 1 to 2 hours.

6Drain chicken. Dredge in bread crumbs.

7Melt 8 tablespoons butter in skillet over medium heat. Add chicken and cook until just brown (3 minutes on each side). Transfer chicken to glass baking dish.

8Melt remaining butter in same skillet.

9Add mushrooms and cook until soft, stirring occasionally.

10Pour on top of chicken. Top with slices of cheese. Add broth to baking dish.

11Bake about 20 minutes.
