- 1 1/2 lb. boneless beef steak (sirloin), cut 1/2-inch thick
- 2 Tbsp. flour
- 3 Tbsp. butter
- 2 Tbsp. Dijon-style mustard
- 1 tsp. Worcestershire sauce
- 3 Tbsp. chopped chives
- 2 Tbsp. brandy
- 1/2 c. beef broth
Directions

1Cut steak into 4 serving size pieces.

2Pound steak 1/4-inch thick.

3Dredge in flour.

4Brown steaks in 2 tablespoons of butter in large frying pan for 2 minutes on each side. Remove to platter and keep warm.

5Spread both sides of steaks with mustard and sprinkle with Worcestershire sauce.

6Cook chives in remaining butter for 1 minute.

7Stir in brandy and broth.

8Stir over high heat until reduced by half.

9Return steaks to frying pan and heat through, about 1 to 2 minutes.
