- 1/4 c. butter
- 3/4 c. uncooked rice
- 1 1/2 c. hot chicken broth
- 2 Tbsp. grated carrots
- 2 Tbsp. thinly sliced celery
- 2 Tbsp. sliced green onions
- 1 Tbsp. parsley flakes
- 1 Tbsp. sliced toasted almonds (optional)
Directions

1Melt butter in a skillet.

2Add rice, toss to coat with butter. Heat on low for 5 minutes, stirring occasionally.

3Place rice mixture in a 2-quart casserole bowl; add hot chicken broth.

4Cover and bake at 350° for 30 minutes.

5Stir in the remaining ingredients.

6Cook 5 additional minutes.
