- 1/2 c. butter
- 1 c. celery, finely chopped
- 1 c. onion, finely chopped
- 1 bell pepper, finely chopped
- 3 (10 3/4 oz.) cans chicken broth
- 1 1/2 c. white rice
- 1/4 c. dried parsley
Directions

1Preheat oven to 350°.

2Melt butter.

3Saute celery, onion and bell pepper for 5 minutes.

4Do not brown.

5Pour broth into 2-quart baking dish; add rice and stir for 3 minutes.

6Add sauteed vegetables and cover dish.

7Bake for 45 minutes and remove from oven.

8Toss rice with parsley.
