- 2 c. defatted chicken stock
- 1 c. long grain rice
- 1 bell pepper, diced
- 1/4 c. sliced black olives
- 2 ribs celery, diced
- 1/4 c. sliced green olives
- 1/2 sweet onion, diced
- 6 plum tomatoes, diced
- 1 clove garlic, minced
- 1 c. fat-free Ranch dressing
- salt and pepper to taste
Directions

1Cook rice in stock for 20 minutes until liquid is absorbed. Place in a large serving bowl.

2Let cool. Add diced vegetables to rice.
