Ingredients

  • 2 c. defatted chicken stock
  • 1 c. long grain rice
  • 1 bell pepper, diced
  • 1/4 c. sliced black olives
  • 2 ribs celery, diced
  • 1/4 c. sliced green olives
  • 1/2 sweet onion, diced
  • 6 plum tomatoes, diced
  • 1 clove garlic, minced
  • 1 c. fat-free Ranch dressing
  • salt and pepper to taste

Directions

    Cook rice in stock for 20 minutes until liquid is absorbed. Place in a large serving bowl.

    Let cool. Add diced vegetables to rice.

    Add dressing. Stir well. Chill.
