- 1/2 lb. sliced bacon, diced
- 1 c. long grain rice, cooked
- 1 c. diced carrots, parboiled
- 1 c. diced celery, parboiled
- 1/2 c. fresh or frozen peas
- soy sauce (optional)
Directions

1In large skillet, cook bacon until crisp.

2Remove to paper towels; drain all but 3 tablespoons of the drippings.

3Cook rice, carrots, celery and peas in drippings until heated through, about 5 to 7 minutes.

4Stir in bacon.

5Serve with soy sauce if desired. Makes 6 to 8 servings.
