- 4 eggs
- 1/2 c. cream
- flour as needed
- salt and white pepper to taste
- 1 pkg. shredded coconut
Directions

1Peel and devein shrimp; lightly dust with flour.

2Combine eggs, cream, salt and pepper; dip shrimp into mixture, then roll in coconut.

3Deep fry in hot oil (375°) about 3 minutes.

4Serve immediately with apricot or plum sauce.
