Coppa Tuna Salad

Ingredients

  • 1 can tuna
  • 1 pkg. small macaroni or shell noodles (preferably salad noodles)
  • 1 (4 oz.) bottle olive oil
  • 1 large onion, chopped fine
  • 4 boiled eggs, chopped fine
  • 2 c. celery, chopped fine
  • 2 1/2 tsp. parsley flakes
  • 1 tsp. garlic salt
  • salt and pepper to taste

    Pour olive oil in mixing bowl.

    Mash drained tuna in oil.

    Add garlic salt, parsley flakes, onion, celery, eggs, salt and pepper. Mix lightly.

    Cook noodles; drain and rinse, then add to olive oil mixture.

    Add enough mayonnaise to moisten (additional salt and pepper may be needed).

    Refrigerate overnight for best taste. Serve with crackers.
