Coppa Tuna Salad

Ingredients
- 1 can tuna
- 1 pkg. small macaroni or shell noodles (preferably salad noodles)
- 1 (4 oz.) bottle olive oil
- 1 large onion, chopped fine
- 4 boiled eggs, chopped fine
- 2 c. celery, chopped fine
- 2 1/2 tsp. parsley flakes
- 1 tsp. garlic salt
- salt and pepper to taste
Directions

1Pour olive oil in mixing bowl.

2Mash drained tuna in oil.

3Add garlic salt, parsley flakes, onion, celery, eggs, salt and pepper. Mix lightly.

4Cook noodles; drain and rinse, then add to olive oil mixture.

5Add enough mayonnaise to moisten (additional salt and pepper may be needed).

6Refrigerate overnight for best taste. Serve with crackers.
