Ingredients

  • 6 chicken breasts
  • 6 chicken thighs
  • 1/4 to 1/2 c. flour
  • salt, pepper and butter
  • 1/2 lb. fresh mushrooms, cut in quarters
  • 4 shallots, chopped
  • 1/2 clove garlic, crushed
  • 20 small whole onions
  • 5 slices bacon, diced and cooked crisp
  • 1 c. Burgundy wine
  • 1 bay leaf
  • 1 1/2 c. croutons, sauteed in butter

Directions

    Coat chicken in seasoned flour.

    Brown in butter; remove and place in 3-quart casserole.

    Brown shallots, mushrooms and garlic. Add to casserole.

    Saute onions; cover and cook until tender. Add to casserole the onions, bacon, wine, bay leaf, salt and pepper.

    Bake for 1 1/2 to 2 hours at 350°.

    Serve with border of croutons.
