  • 2 chicken breasts, halved
  • 8 oz. Monterey Jack cheese
  • 4 thin slices ham
  • 1 can cream of mushroom soup
  • 4 servings cooked rice

Directions

    Fill halved breasts with slice of ham and slice of cheese. Roll chicken breasts up.

    Place in a 1-quart baking dish.

    Grate up remainder of cheese.

    Spread over breasts with the mushroom soup. Bake, covered, at 350° for 45 minutes to 1 hour.

    Serve over rice. (Can be made ahead and frozen.)
