- 1 c. shelled pistachios
- 2 1/4 c. flour
- 1/2 tsp. salt
- 4 1/2 tsp. ground coriander
- 1/2 lb. (2 sticks) room temperature butter
- 1/4 tsp. cinnamon
- 1/2 c. brown sugar
- 1/2 tsp. grated orange zest
- 1 egg
- 1/4 tsp. vanilla
- 3/4 c. chopped dates
Directions

1Chop nuts; set half aside.

2Finely chop remaining nuts. Combine flour, salt, coriander and cinnamon.

3Beat butter, sugar and zest until creamy.

4Beat in egg and vanilla.

5Gradually beat in flour mixture.

6Stir in dates and coarsely chopped nuts.

7Chill dough 30 minutes.

8Form into logs about 2 inches in diameter, wrap in plastic and chill until firm but not hard, about 1 hour.

9Roll logs of dough in finely chopped nuts.

10Cut into 1/4-inch slices. Bake at 350° for 12 to 15 minutes until edges are golden.

11Makes 54 cookies.
