- 2 8 1/2-ounce packages corn muffin mix
- 1 cup nonfat milk
- 1 cup low-fat cottage cheese
- 2 large eggs
- 1/2 cup (packed) shredded cheddar cheese (about 2 ounces)

2Line 12 standard-size muffin cups with paper liners.

3Combine muffin mix, milk, cottage cheese and eggs in large bowl.

4Using electric mixer, beat until well combined.

5Mix in cheddar cheese.

6Let stand 5 minutes.

7Spoon batter into prepared cups, dividing equally.

8Bake until muffins are brown on top and tester inserted into center comes out clean, about 30 minutes.

9Let muffins cool to room temperature.
