Ingredients

  • 1 (10 oz.) frozen cut corn
  • 1 c. celery, sliced
  • 1 (14 1/2 oz.) chicken broth or water
  • 2 c. milk
  • 1/2 c. cheese, shredded
  • dash of cayenne pepper
  • croutons
  • 1 (8 oz.) potatoes, pared and diced
  • 1/2 c. onion, chopped
  • 1 1/2 tsp. salt
  • 3 Tbsp. flour
  • 1 tsp. dry mustard
  • 1/2 c. beer

Directions

    Combine corn, potatoes, celery, onions, broth and salt.

    Boil, then simmer until tender, 15 to 20 minutes.

    Combine milk and flour.

    Blend into vegetables.

    Cook until slightly thickened. Add cheese (separate while adding), mustard and pepper.
