Ingredients
- 1 c. flour
- 1 c. yellow or white cornmeal
- 3 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 c. heavy cream
- 1 egg
- 3/4 c. fresh or frozen corn kernels
- 1/4 c. melted butter
- 1 Tbsp. chopped fresh dill
Directions

1In a bowl, mix together flour, cornmeal, sugar, baking powder and salt.

2Set aside.

3In a small bowl whisk together milk, egg, corn kernels and melted butter until blended.

4Add to dry ingredients, along with dill, and stir until blended.

5Spoon into buttered muffin tin, filling each cup 2/3 full.

6Bake in preheated 400° oven until toothpick inserted in muffin comes out clean (about 15 minutes).

7Cool for 3 minutes, then remove.

8Makes 15 muffins.
