Corn and Ham Chowder

- 1 tablespoon butter
- 1 medium onions diced
- 2 each shallots diced
- 3/4 cup ham cooked
- 3 cups potatoes cubed
- 1 each bay leaves
- 3 tablespoons parsley leaves chopped
- 3 cups milk
- 4 cups corn
- 2 tablespoons flour, all-purpose
- 1/4 cup basil chopped
Directions

1In a large pot, melt butter and oil over medium heat.

2Saute onion and shallots 5 minutes, until softened not brown.

3Add potatoes, 2 cup water, bay leaf, parsley.

4Bring to boil, reduce heat and simmer 30 minutes until potatoes are JUST tender.

5Meanwhile warm milk in saucepan over low heat.

6Add warm milk and corn to chowder and stir well.

7Put the flour in small bowl.

8Take 3 to 4 tablespoons of hot broth from pot and mix w/flour to make a paste.

9Slowly add to pot, whisking to make a smooth soup.

10Let soup simmer 3 to 5 minutes until thickened and coorn is tender, but not soft.

11Remove form heat, stir in basil and serve with butter.
