Ingredients

  • 2 12 cups plain flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 12 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 pinch cayenne pepper
  • 60 g butter
  • 1 cup grated cheese
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon Worcestershire sauce
  • 1 cup corn kernel, canned
  • 1 cup olive, pitted, chopped coursely

    Sift flour, sugar, baking powder, bicarb soada,salt, mustard and cayenne into large bowl.

    Rub in butter using fingertips till like breadcrumbs.

    Add grated cheese, stir in.

    In a small bowl combine egg, buttermilk and worcestershire sauce, stir together.

    Make a hole in the centre of the flour, pour in liquid.

    Using a wooden spoon mix till ingredients are just moistened.

    Stir in corn and olives.

    Grease loaf tin 18 x 10 cms.

    Pour in batter.

    Bake at 190 C for 45 - 50 minutes or till skewer comes out clean when inserted.
