  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 c. margarine
  • 1 (No. 303) can whole kernel corn, drained
  • 1 (No. 303) can cream-style corn
  • 3 eggs
  • 1 box Jiffy corn muffin mix
  • 1 c. grated Cheddar cheese
  • 1 c. sour cream

Directions

    Saute the onion and green pepper in the margarine.

    Mix together vegetables.

    Add the eggs and Jiffy corn mix. Mix to this, sour cream and 1/2 cup cheese.

    Put in 2-quart casserole. Top with rest of cheese.

    Bake, uncovered, at 350° for 45 minutes.
