- 1 small onion, chopped
- 1/2 green pepper, chopped
- 1/2 c. margarine
- 1 (No. 303) can whole kernel corn, drained
- 1 (No. 303) can cream-style corn
- 3 eggs
- 1 box Jiffy corn muffin mix
- 1 c. grated Cheddar cheese
- 1 c. sour cream
Directions

1Saute the onion and green pepper in the margarine.

2Mix together vegetables.

3Add the eggs and Jiffy corn mix. Mix to this, sour cream and 1/2 cup cheese.

4Put in 2-quart casserole. Top with rest of cheese.

5Bake, uncovered, at 350° for 45 minutes.
