  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (16 ounce) can black beans, rinsed &amp drained
  • 2 large tomatoes, seeded &amp diced
  • 1 medium red onion, chopped
  • 14 cup minced fresh cilantro
  • 2 garlic cloves, minced
  • 2 tablespoons white sugar
  • 2 tablespoons white vinegar
  • 2 tablespoons canola oil
  • 1 12 teaspoons lime juice
  • 14 teaspoon salt
  • 14 teaspoon ground cumin
  • 14 teaspoon ground pepper

Directions

    Mix Corn, beans, tomatoes, onions, & cilantro in large bowl.

    In separate bowl mix garlic, sugar, vinegar oil, lime juice, salt, cumin & pepper.

    Approximately 1 hour before serving mix dressing with veggies and refrigerate.

    Serve with tortilla scoops.

    Veggies can be prepared the day before, just keep the onions seperate & the dressing separate.
