  • 1 1/4 c. unbleached white flour
  • 3/4 c. whole grain corn meal (stone ground)
  • 4 Tbsp. sugar
  • 5 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg
  • 1 c. milk
  • 2 Tbsp. melted butter

Directions

    Sift together all dry ingredients. Beat egg with milk and add to flour mixture along with melted butter. Stir well. Spread batter in 9-inch pie plate and bake in 375° oven for 30 to 35 minutes or until lightly browned around edges. Serves 6.
