  • 1 c. sifted flour
  • 3 1/2 tsp. baking powder
  • 3 Tbsp. sugar
  • 1 egg, slightly beaten
  • 1/4 c. melted shortening
  • 1 tsp. salt
  • sprinkle of black pepper
  • 2 c. cornmeal
  • 1 c. milk

    Sift together flour, baking powder, salt and sugar.

    Add cornmeal and mix thoroughly.

    Combine egg, milk and shortening. Pour into flour mixture.

    Stir just enough to moisten dry ingredients.

    Do not beat.

    Turn onto greased 8 x 8 x 2-inch pan. Bake in a 400° to 425° oven for approximately 25 minutes.
