  • 2 c. cornmeal (not self-rising)
  • 1/2 c. flour (all-purpose)
  • 3 tsp. baking powder
  • 1/4 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 c. buttermilk
  • 1 egg
  • 4 Tbsp. melted shortening

Directions

    Beat egg; add soda to buttermilk and add to egg.

    Mix in flour, cornmeal, baking powder and salt.

    Add melted shortening. Pour in preheated and oiled skillet.

    Bake at 475° until slightly browned.
