- 1 1/4 c. yellow cornmeal
- 3/4 c. all-purpose flour or whole wheat
- 1/4 c. granulated sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs, lightly beaten
- 1 1/4 c. milk
- 1/2 c. vegetable oil
Directions

1Preheat the oven to 425°.

2Grease a 9 x 5-inch loaf pan or an 8-inch square baking pan.

3In a large bowl, mix together cornmeal, flour, sugar, baking powder and salt.

4In a medium bowl, mix together the eggs, milk and oil until smooth.

5Add milk mixture, stirring until the dry ingredients are just moistened.

6Pour batter into prepared pan.

7Bake until golden and a toothpick inserted in center comes out clean, 25 minutes.

8Transfer pan to wire rack to cool for 15 minutes.

9Cut into squares.
