  • 2 c. self-rising cornmeal mix (white)
  • 2 large eggs
  • 1 1/4 c. whole milk
  • 1/4 c. bacon grease (hardened) or all-purpose shortening

Directions

    Preheat oven to 400°.

    Grease iron skillet.

    In large bowl, mix corn meal, eggs, milk and hardened bacon grease or all-purpose shortening.

    Pour into iron skillet.

    Bake at 375° for 25 to 30 minutes or until done.

    Best eaten while hot with butter.
